Ingredients
Serves 3 to 4
1/2 cup Black-eyed beans
3 cups Rice
300 g Fresh lamb meat
1 tablesppoon tomato paste
3 tablespoons fried onion
Oil for sauteing
Salt and pepper for seasoning
1 tablespoon Spices, including, powdered Mohammadi flowers, cinnamon and caraway or Persian cumin
1 orange, you will need its rind only.

Directions
Wash rice and beans and soak in lukewarm water separately 2 to 3 hours. Change the water of the beans at least twice and fill again. Cut the meat into cubed stewing meat. Do chop the onions or grate. Heat oil in a pot and sauté the chopped onion till translucent. No need to sauté longer to make onion golden in color. Add in the stewing meat and keep sautéing. Do not fry. Just sautéing for a few moments will do.
Stir in one tablespoon tomato paste and saute. Then add the soaked beans along with 2 glasses of water. Close the lid and allow the meat and beans to cook. Try to check it every now and be careful not to overcook the beans otherwise they will get crushed once serving. As you already know, the Black-eyed beans cook very quick.
At the end, add in salt, black pepper, brewed saffron, and grated orange skin. A tip of teaspoon will be enough. Too much grated rind will make your cuisine unpleasant. Put the grater over the pot and and do grate once or twice. Very little.
Put the soaked rice into a pot of boiling water till softened a bit. Strain the rice and cook it. When serving, put a layer of rice and a layer of the thickened meat and beans mixture in a serving platter. Don't forget to sprinkle the rice layer with Polo spices. I usually apply cinnamon, black caraway and powdered Mohammadi flowers. It is optional but this way the taste will be far better.
If desired, you can apply fried meatballs. Grind 300 grams fresh meat with one medium onion. Mix them in a mixing bowl and sprinkle with a pinch of salt, turmeric and pepper. Mix well and make walnut-sized pieces out of the mixture and fry the meatballs in oil. Serve this yummy dish with fresh herbs like basil leaves and pickled vegetables. Bon Appetit!
