Dolmeh or stuffed vegetables include a large variety, from cabbage, Lettuce and grape leaves to courgette, eggplants, sweet pepper, tomato, onion and the like. But may be the most popular and famous Persian Dolmeh which decorates the table is stuffed bell peppers. Here is one recipe but you can change the fillings to try a different cuisine.
The dish is not fattening at all. Rather it contains a variety of vitamins. You can make it either in the oven or over the stove.
Ingredients
Serves 4
4 Red, green, and yellow bell peppers
1/2 cup Rice
1 cup Fried onions
150 g Ground meat
1 cup split peas
1 cup tomato puree
2 tablespoons Tomato paste
150 g aromatic herbs including leek, parsley, coriander, dill, mint, tarragon, and oregano
Salt and pepper for seasoning
2 tablespoons liquid oil
Directions
First put rice in a small pot of water and allow till half-cooked. Cook split peas separately. In a skillet sauté ground meat, fried onions, and if desired one chopped garlic clove. Add in finely chopped herbs and keep sautéing.
Stir in the cooked split peas and rice. Season to taste with salt and pepper powder. Remove from the heat. Cut the peppers' heads with a sharp knife. Remove the seeds. Sauté the peppers in one tablespoon oil over the high flame. This will prevent them from loosing shapes during cooking.
In a saucepan, sauté tomato in a little oil and sprinkle with salt, pepper and turmeric powder. Add in tomato puree and allow 5 minutes to boil. Once thickened, turn off the heat. Stuff the peppers with your prepared fillings and close the lid. Press well till the ingredients are compressed. Put them in the tomato sauce in a pot. Cook till peppers are softened. You can do this in the oven if you like. If you want to make through steaming, you should put the stuffed peppers on the drip tray. Pour a little water in the lower bowl and cook peppers for 20 to 25 minutes.

Cooking points,
The solution of lemon juice and sugar will make the sauce tasty.
You can apply prunes and fried onions in the sauce to have a nicely thickened and flavored sauce.
If you do this in the oven you can cover the peppers with pizza cheese.
