300 g Stewing Fresh Mutton
250 g leek, chopped
50 g parsley, chopped
120 g white beans, soaked in water
1 medium onion, finely cubed
1 teaspoon turmeric powder
6 tablespoons oil
Salt and red pepper powder for seasoning
Dried lime powder
Procedure
Put a pot over the medium heat and pour in 3 tablespoons oil. Heat it and saute cubed onion 5 to 6 minutes. Add in the stewing meat and after 4 minutes of time add in turmeric powder, white beans, 2 cups boiling water and cook 2 to 3 hours on the low flame till meat and beans are soft.
Pour the remaining oil in a frying pan on the medium flame and saute chopped leek and parsley 6 to 7 miuntes. Then remove from the heat.
Choose a medium -sized pot and transfer meat, beans, leek and parsley and season to taste with salt and pepper powder. Pour in the gravy and cook on low heat till the stew is settled and accumulated with oil on top
Eventually, in the last 5 miuntes, add in the dried lime powder and adjust the seasoning. Transfer to a serving dish and serve hot with rice. Bon Appetit!
