Kofta is a family of meatball or meatloaf dishes found in South Asian, Middle Eastern, Balkan, and Central Asian cuisine.
Ingredients:
2 cups ground cooked chicken
1 cup dried bread, ground
70 g melted butter
2 eggs
2 to 3 cups chicken stock
Salt and powdered black pepper for seasoning
Directions
First cook the chicken and crush well in a mixer or meat grinder. Put in a mixing bowl and add the dried ground meat. Sprinkle with salt and pepper powder or any desired spices. Melt the butter and allow to cool. Then crack the eggs one by one in the melted butter and beat well. Add to the mixture of chicken and bread. You should prepare a dough-like mixture which doesn't stick to your palm If desired you can apply a little dried aromatic herbs as well. Shape the mixture into your desired shapes, round or oval shaped.
Put the chicken stock over the heat and bring to a boil. Allow it to thicken. Then put the meatballs inside the stock. Don't put them altogether. one by one! In case one is broken into pieces add yolk of one egg to make the mixture consistent. Once the meatballs are fully done, remove them from the stock and put in a serving dish. Serve with fresh Persian bread! Bon Appetit!
