Ghormeh Sabzi is regarded as the most popular stew among the Iranian. But did you know that the dish is made different ways throughout the country? People in the north cook it with cranberry beans or kidney beans. They believe that the stew becomes thick and as a result it is more delicious.
They fry the herbs and apply tomato paste. People in Ardabil and Zanjan prepare the cuisine with black-eyed beans. The Tabrizi believe that he stew should be made out of fresh ingredients so they go for fresh and less fried herbs. They use black-eyed beans too to make it not only delicious but nutritious. So, how do " you " make it?
Procedure
First, chop the onion and fry in a little oil. Then add the stewing meat sprinkled with salt and spices and saute a bit. After that pour in some water and allow till half-cooked. In the middle o this process, add in lack-eyed beans and sauteed herbs such as, leek, coriander, fenugreek, parsley, spinach and dried limes. Allow to cook on a low flame till settled.
The cuisine contains 1,550 kilocalories of energy. So each person receives 400 kilocalories( 4 people totally). But since it is served with rice the gained energy will reach 600 kilocalories at least.
Calf meat contains more fat than mutton.
Calf and lamb meat are among the products that are consumed most. To reduce the amount of received fat you are recommended to consume lamb meat less than calf. Calf meat contains iron, zinc and selenium. It also contains a more amount of Selenium ( the amount of them is the same.) and includes half the fat.
As a result, You are advised to put it in your daily menu. It is interesting to know that it should be consumed in moderation and to have a healthy and nutritious menu you should go for he white meat as well to get enough protein especially if you have to limit your red meat consumption due to heart diseases.
Black-eyed beans rich in magnesium and calcium
Being among the grains or plant protein sources, the beans should be placed in the menu of those who don't eat much meat. Black-eyed beans contain magnesium, iron, calcium and folate and so consuming them habitually will reduce the risk of heart diseases and anemia. Do you know that what problems will be made due to shortage of magnesium? Studies show that lack of this vital mineral will lead to muscle spasm, high blood pressure, loss of appetite and irritability. It will also multiply the lack of calcium in the body.
consuming black-eyed beans will provide your body with the daily need for magnesium. Black-eyed beans also contain calcium, plant calcium which is less absorbed. Consuming the beans as a habit can supply the need for this mineral to some extent. Studies show that the black-eyed beans are less flatulent compared to other beans; So it is a good idea to apply them in the cuisine especially for those who complain about accumulation of gas in their stomach.
Dried limes anti-hypertensive
Dried limes, the ingredients in some stew dishes, are produced in Fars Province, in the cities of Shiraz, Jahrom and Minab. Its fresh fruit is mustard-colored and very sour.
The fruit contains rich vitamin C; its amount exceeds other citrus produces which reduces blood pressure and even blood fat. Consuming them along with borage flowers or with honey and crystallized sugar is recommended. You are advised to remove the seeds before adding into the food otherwise your food will be bitter. If put in the food in whole, do not eat as it is accumulated with oil and will result in gaining weight; although it doesn't have any calories itself.
What to serve with the food?
The stew is served with rice which is recommended to cook Katteh( non-strained rice). Serve the dish with low-fat yogurt or a plate of fresh leafy vegetables to multiply the nutritional value of your meal. As a drink, consume fresh citrus juice or its combination with carrot juice which will multiply the iron absorption in the body.
If you usually bloat, you'd better go for the black-eyed beans among other beans as they are less flatulent. but do not forget to soak them in water 24 hours. Another point is to sprinkle the food with ginger or caraway which are strong anti-carminative!
If you have a high blood pressure, apply little salt and season the stew with fresh lemon juice or dried limes. As said earlier, dried limes reduce the blood pressure and helps to solve this problem. You are recommended to drink a glass of fresh grapefruit( great anti hypertensives).
