Ingredients:
1/2 tablespoon ground black pepper1/2 tablespoon garlic, pressed
2 tablespoons fresh ginger, grated
2 tablespoons range rind, grated in small size
4 green onions, finely chopped
1 red bell pepper
2 tablespoons honey
3 tablespoons soy sauce
150 ml liquid oil
5 ml sesame oil
Salt and pepper for seasoning
700 g calf fillets
16 cherry tomatoes
16 fresh laurel leaves
16 small mushrooms
8 thin wooden skewers
Directions
Put in a food processor, or a mixer ground black pepper, garlic, ginger, orange rind, and green onions, as well as red pepper and mix a few seconds. Put the mixture inside a deep bowl and add the honey, soy sauce, and oil( liquid and sesame oil) and mix well. Season to taste with salt and pepper. Cut fillets into smaller pieces. Add them into the mixture and stir well. Allow fillets to stay there at least 4 hours or preferably overnight to marinate well (keep in the refrigerator).Half an hour before making kebabs, immerse the wooden skewers inside water till entirely wet This is to avoid burning them. In each skewer put 1 cherry tomato, 1 laurel leave, 1 small fillet, and 1 mushroom. Repeat this sequence till the skewer is full. Do this with the rest of the ingredients. Put the skewers over an electric barbecue, in the grill, or inside the char-grill pans and roast them. You can rub some of the mixture on all the fillets with a small brush to give it a fantastic flavor. Once ready serve with either rice or bread. Bon Appetit!
