Kuku also spelled as Kookoo is an egg based Iranian dish. It is frequently a vegetarian dish, made with whipped eggs which then are folded in with various ingredients. It is similar to the Italian dish frittata or an open-faced omelette.
Ingredients
Serving 4Minced meat 400 g
1 glass leafy vegetables including, tarragon, parsley and coriander, finely chopped
1 large onion
1 clove garlic
2 tablespoons barberries
4 eggs
2 potatoes
Salt and powdered black pepper for seasoning
Directions:
Grate the onion and garlic and saute in oil till golden. In a mixing bowl, put the ground mutton, chopped leafy vegetables, barberries, the eggs and sprinkle with salt black pepper. Mix well. Then Chop the potatoes into tiny cubes and fry in oil . Then add to the rest of the ingredients and mix well. Heat oil in a frying pan and spread all around the dish and allow till the bottom side is fried. Then flip over and fry the other side as well. Then put Kuku in a serving dish and garnish with the vegetables of your interest. Pickled garlic goes well with the dish. Serve with bread. Bon Appetit!
