Kuku also spelled as Kookoo is an egg based Iranian dish. It is frequently a vegetarian dish, made with whipped eggs which then are folded in with various ingredients.
2 dessertspoons olive oil
1 1/2 cups potatoes, cooked and cut into tiny cubes
1 cup green bell peppers, chopped
4 eggs
1/2 dessertspoon chili sauce
Salt and black pepper powder for seasoning
1/2 cup Cheddar cheese
2 tablespoons parsley leaves or coriander
Directions:
Pour 1 tablespoon olive oil in a small pan and saute a bit the cooked potatoes. In a mixing bowl, crack the eggs and whisk; then season to taste with chili sauce and salt. Put the sauteed potatoes in the bowl and mix well.
Spread the mixture n a non-stick frying pan greased in 1 deseertspoon oil. Flatten the surface with your spoon and finally expand cheddar cheese on top. Allow to cook. you can do it in the oven as well. Once ready put in a serving plate and garnish with parsley leaves beside the dish. It makes a wonderful breakfast. Bon Appetit!
