Coriander Kebab is a traditional dish in Azerbaijan, including meatballs and the gravy. It is basically served with bread; some immerse pieces of bread inside the bowl of gravy and serve it just like Abgusht, a very famous and popular Persian dish.
The food is mouthwatering due to the existence of coriander and dried limes. Here is he recipe:
Ingredients:
500 g minced meat
200 g split peas
2 onions
2 eggs
500 g coriander leaves, cleaned
6 dried limes
1 tablespoon white flour
Liquid oil for frying
Salt, black pepper and turmeric powder for seasoning
Directions:
To start, pour water inside a pot and put inside the cleaned split peas. Allow it to cook on the stove 45 minutes to 1 whole hour. Remove and put in a strainer below which is placed a bowl. Keep aside the drained water.
Peel 1 onion and wash. Cut in half. Put 1/2 of the onion inside a food processor along with minced meat. Crush well.
Remove into a mixing bowl. Put the other half with cooked split peas inside the gadget and crush as well. Then transfer into the mixing bowl and knead well with your palm.
Season to taste with salt, pepper and turmeric. Then go over to the eggs; break them and add into the mixture. Keep on kneading till well-mixed. It is ready to follow the cooking process.
Cooking Point:
Eggs are added to make the patty consolidated and sticky and avoid falling into pieces.
In a medium-sized frying pan pour some oil and heat. Shape pieces of the mixture into small meatballs; they should be a little larger than ordinary walnuts.
When all the meatballs are well fried, remove and keep aside.
Wash the cleaned coriander leaves and put them in a colander till the excess water is removed. Then chop up with a sharp knife; not too small in size.
Put a small pan on the flame and heat a little oil. Saute the chopped coriander.
Take the second onion and peel, wash and chop u as well. In a medium-sized pot, pour a little oil and allow to heat over the stove. Fry chopped onion till golden in color. Add in 1 tablesppon flour and mix well in the pan. After that, add the drained water from the cooked split peas along with a cup of water. Wash the dried limes and make several holes on their body and put inside the pot. Bring to a boil and then add in sauteed coriander and let it over heat 15 minutes. Finally, add in fried meatballs and wait another 4 to 5 miuntes ill the meatballs re cooked through. The dish is ready. Garnish with a variety of vegetables and serve with either rice or bread.
