Ingredients:

Serving 4
1 large fish
1/2 cup fresh lemon juice
1/2 cup olive oil
50 g coriander
50 g parsley
50 g mint leaves
1/2 dessertspoon saffron
A fistful of diced walnuts
A fistful of barberry
Salt and powdered black pepper for seasoning

Directions:

Clean the fish and empty the guts. Then wash properly. Fry a bit 2 to 3 tablespoons chopped onion in a pan of hot oil. Clean the leafy vegetables and chop up finely. Put inside the pan and saute a bit. Then sprinkle with salt and black pepper. Add in diced walnuts and barberries and keep sauteing only for a few seconds. Remove the dish from fire. Make a rather simple cut on one side of the fish body (its abdomen) and stuff with the prepared fillings. Close the edges firmly either with a needle or toothpicks. Grease the oven tray with drops of oil and place the fish inside( just like the way it swims in the sea; not straight rather in a circular form). Turn on the oven at 400 degrees and lay the tray inside and grill 15 minutes.
Remove and peel the skin and cover it in the mixture of olive oil, fresh lemon juice, saffron and salt and pepper. Rub with your palm till it is immersed well. Set the fish inside the oven one more time and keep cooking almost 1 hour. Once ready, take it out of the oven and transfer into a serving platter and arrange parsley leaves and lemon rings beside the dish.
You can drizzle hot tomato sauce on top and then take onto the table. Serve hot. Bon Appetit!
