Ingredients
Serving 3 to 41 cup mushrooms, chopped or sliced
2 cups broccoli, chopped
1 1/2 to 2 cups chicken stock
1/2 cup cream
1 tablespoon butter
1 tablespoon olive oil
Salt and Pepper for seasoning
Directions:
Melt butter in a pan. Add in the mushrooms and saute 10 miutes. In the meantime, bring the chicken stock into a boil in a pot and add the broccoli. Season to taste with salt and pepper . Keep cooking 5 to 10 minutes till the vegetables are soft.Wait till the soup is cool then add in the sauteed mushrooms.
Transfer the mixture into a blender and mix the ingredients into a smooth puree. Turn it back into the pot again and add the cream, stirring well. Adjust the seasoning and heat the soup. It is ready to serve. Bon appetit!
