Ingredients:
100 g liquid oil2 onions
3 green bell peppers
1 teaspoon curry powder
2 tablespoons tomato paste
500 ml water
750 g mushrooms
3 tablespoons sour lemon juice
1/2 teaspoon salt
Yolks of 2 eggs
1 teaspoon black pepper powder
Directions:
Pour oil in a pot and heat oil. Saute chopped onion till golden. Cut sweet peppers into medium cubes and add into the pot, sauteing 5 minutes.Stir in tomato paste, and curry powder. Pour in water.
Cut mushrooms into 4 parts and separately saute in a pan. Add in lemon juice and salt. Saute 10 minutes.
Then add in the mixture into the pot and saute another 15 minutes. In a small bowl, beat well the yolk using a fork and sprinkle with black pepper. Remove the pot from heat and add in the beaten yolks and stir well till firm. Adjust the seasoning. set over the flame again and allow 5 to 10 minutes till settled. Serve with either bread or rice.
