Kuku also spelled as Kookoo is an egg based Iranian dish. It is frequently a vegetarian dish, made with whipped eggs which then are folded in with various ingredients. It is similar to the Italian dish frittata or an open-faced omelette.
Ingredients:
3 medium potatoes peeled60 g spinach leaves, cooked
1 small onion, grated
3 tablespoons, white flour
Salt and powdered black pepper for seasoning
2 eggs, well-beaten
Vegetable oil for frying
Directions:
Grate the potatoes and remove its water after grating. Equally, remove the remaining water from cooked spinach and grated onion. In a mixing bowl, mix together the vegetables; add in the white flour along with beaten eggs. sprinkle with salt and pepper and ix the ingredients well. In a frying pan, pour oil and take 3 tablespoons off the mixture and spread in the pan; flatten the surface with the back of your spoon. Do repeat with the rest of the mixture. Just make sure to keep a distance in between.Give each side 3 to 4 miuntes till golden brown. Turn them over carefully without breaking into pieces and fry the other side as well. Place them in a desired serving dish and serve with fresh Persian bread. Bon Appetit!
