Kuku also spelled as Kookoo is an egg based Iranian dish. It is frequently a vegetarian dish, made with whipped eggs which then are folded in with various ingredients. It is similar to the Italian dish frittata or an open-faced omelette.
Ingredients:
Serving 4 to 62 green leeks, finely chopped
175 g fresh spinach, chopped
5 eggs
4 green onions, chopped
150 g leafy vegetables used in Kuku cuisine including coriander, parsley, dill, leek, green onions, and mint leaves
20 g walnuts
Salt and Chili powder for seasoning
Directions:
Grease a non-stick frying pan with 1 tablespoon oil and allow to heat. Chop the green leeks and saute in oil a bit. Then add in chopped spinach till softened. Keep over the medium heat 3 minutes.Keep aside to cool. In a mixing bowl, beat the eggs well and spinach, green leeks, green onions and all the leafy vegetables( finely chopped). Add diced walnuts and sprinkle with salt and chili. mix well. Pour 3 tablespoons oil in a pan and spread the mixture all over the dish and flatten with your spoon. Cover it and reduce the heat to low till cooked well. Turn over and lay in the oven and give enough time to row golden on top. It is ready! Serve hot with fresh Persian bread. Bon Appetit!
