1 cup eggs

1 cup mushrooms, chopped
1 onion, finely chopped
2 tablespoons olive oil
2 cups spinach leaves
1/4 cup Feta cheese, cubed
Directions
In a mall bowl beat the eggs well with a fork and season to taste with salt and pepper powder. Pour oil in a frying pan and saute the chipped onion 5 minutes.when the onion is soft and golden, add in chopped and keep sauteing for a few seconds. Then stir in the spinach leaves and mix well. Grease the pan with oil and pour the seasoned beaten eggs. Once they become firm, spread the sauteed mixture on a half of the round fried eggs. Then place the cheese on it and turn the other half over the mixture and press with the back of your spoon. Again sprinkle some cheese on top and allow to cook on the heat.
After 3 minutes of time, the omelet is ready. Serve with fresh Persian bread. Bon Appetit!
