400 g lamb shank
400 g split peas
4 eggs
2 medium onions
Oil for frying
1/2 teaspoon powdered saffron
Salt and black pepper powder for seasoning
1 teaspoon baking soda for puffing up
Directions:
Chop up the onions and saute in oil a bit. Then add in he pieces of meat and keep sauteing till its juice is gone. Remove and grind he sauteed ingredients. Add in the cooked split peas and grind again. In a large mixing bowl, crack the eggs and sprinkle with salt, pepper, baking soda (if desired) and brewed saffron and mix them well. Add the ground mixture into the bowl and knead well. Heat oil in a non-stick frying pan and make organized round patties out of the mixture with your palms. Make a whole in the center ( this is to cook thoroughly). Put he patties (Shami ) in hot oil and fry them finely. Do fry on both sides till golden brown. Once ready, place them in a serving platter and garnish with lemons and other vegetables. Serve with Persian bread. Bon Appetit!
