Kofta (see § Naming for other terms) is a family of meatball or meatloaf dishes found in South Asian, Middle Eastern, Balkan, and Central Asian cuisine. In the simplest form, koftas consist of balls of minced or ground meat—usually beef, chicken, lamb, or pork—mixed with spices and/or onions.
Ingredients
500 g ground meat
300 g chickpeas
1 kg rice
3 tablespoons sultana raisins
1 kg leafy vegetables including, parsley, dill, leek and tarragon
3 tablespoons sliced onion
1 onion, chopped
Salt, black pepper powder and turmeric for seasoning
Directions:
Grind the meat with chopped onion and pre-soaked chickpeas again. Keep 1 glass of rice aside and mix the remaining , half-cooked, with the chopped vegetables and ground mixture. Sprinkle to taste with salt, peeper and turmeric and knead well with your palm. You can grind the ingredients altogether if you like. Don't forget to set aside half of the minced vegetables and chickpeas.In a pan saute sliced onion and raisins. fill a pot with some water and put in the remaining vegetables and ground chickpeas. Season to taste with turmeric, pepper and salt. Bring to a boil and take an orange-sized piece off the kneaded mixture and stuff the center with fillings of sauteed raisins and onion. Shape into balls( kufta) with your palms. Then put in the boiling water. Do repeat with rest of the mixture. Put in the rice kept aside before and our in some oil. Cover and keep cooking till well-done. Just make sure to check quite often as the kufta might fall into pieces in a long time.
