2 tablespoons butter
1/2 cup chopped onion
1 cup carrots, chopped
1 stem of celery, chopped
1 tablespoon garlic, grated
4 cups chicken stock
2 large potatoes, peeled and cubed
1 tablespoon flour
1 cup water
2/3 cup milk
2 cups broccoli, or cauliflower florets, cut into small pieces
2 full cups cheddar cheese, grated
Salt and powdered black pepper for seasoning
Directions:
Melt butter in a pot and saute the onion, carrot till soft. Add in the garlic and keep sauteing 2 minutes.
Pour in chicken stock and cubed potatoes and bring to a boil. Then reduce the flame again till potatoes are soft.
Mix water and flour and add into the pot as well. Keep stirring to thicken
Add in milk, cauliflower or broccoli and keep cooking till the vegetables are soft.
Season to taste with salt and black pepper. Finally add in grated cheddar cheese and allow to melt well in the soup. It is ready to serve. Bon Appetit!
