Ingredients:

8 desserspoons olive oil
4 garlic cloves, pressed
3 shallots, chopped
600 g tomatoes
2 dessertspoons dried penny-royal
1/4 teaspoon red (chili) powder
1/2 cup fresh basil leaves
3/4 dried pieces of bread
3/4 cup Parmesan cheese
1/2 flour
2 large eggs
9 pieces of chicken breast (bones removed)
3/4 cup Mozzarella cheese
Directions:
Put 4 tablespoons olive oil in a pan on low heat. Add in pressed garlic and chopped shallots. Allow it 4 minutes till thoroughly soft. After that add in chopped tomatoes, penny-royal powder, and red chili. Keep on the low heat for a couple of minutes, stirring. Add in basil lives, and season to taste with salt and black pepper powder.
In a mixing bowl, put dried bread along with grated Parmesan and mix. Sprinkle with the flour. The sauce is ready. In a deep bowl, crack the eggs and beat well. Immerse chicken breast inside it.
Put the remaining olive oil in a non-stick frying pan and fry the chicken. 4 minutes are enough to fry either side. Place the contents of the mixing bowl all over the chicken. Pour the red sauce over topped with mozzarella cheese . Place the dish inside the oven 10 to 20 minutes till crispy and well-done.
