Omelet is a dish containing vegetables which can make a light and healthy evening meal.
Ingredients:
90 g or 3/4 wheat flour
1 egg
2/3 cup yogurt
3 tablespoons water
1 tablespoon oil
500 g spinach leaves, boiled and mashed
Tip of 1 dessertspoon nutmeg, grated
Salt and black pepper powder for seasoning
Filling ingredients
1 tablespoon liquid oil
3 green onions
225 g or 1 cup cream
4 tablesppoons sweet yogurt
90 g or 3/4 cup pizza cheese, grated
1 egg, beaten a bit
125 g or 1 cup walnuts
2 tablespoons parsley leaves,chopped
Tip of 1 teaspoon black pepper powder
Directions
Sieve the flour and mix with a little salt. in a mixing bowl, mix the egg, yogurt, water and oil. sprinkle with salted flour and stir well. Add in the pureed spinach along with black pepper and grated nutmeg. The mixture for the omelet is ready.
To prepare the filling, pour oil in a non-stick frying pan and saute a bit the chopped green onions. In another mixing bowl, combine cream, sweet yogurt, and 1/2 of pizza cheese. then add in the beaten egg along with diced walnut and chopped parsley. Season to taste with salt and chili or black peeper.
Grease a small round non-stick frying pan with a little oil and heat on the stove. Put a few tablespoons of the mixture in the pan and shake it till the mixture is spread all around the pan. allow on the heat 3 minutes till bubbles pop up in the center of the dish. Turn it over and fry the other side 20 miuntes. Then remove the omelet in a plate and cover in aluminum foil to keep warm. Do repeat this with the remaining mixture.
Now spread he filling on half of the prepared round omelet and wrap with the other half. Do this with all the prepared omelets. Take a deep-bottomed Pyrex dish and place the omelets in it, one over the other. Finally sprinkle with chopped pizza cheese on top. Put the dish in the oven at 80 degrees Celsius 15 miuntes. Yummy!
