Kuku also spelled as Kookoo is an egg based Iranian dish. It is frequently a vegetarian dish, made with whipped eggs which then are folded in with various ingredients. It is similar to the Italian dish frittata or an open-faced omelette.
225 g potato flour
2 eggs
175 g pizza cheese
1/2 cup flour
50 g spinach leaves
2 tablespoons butter
Salt and powdered black pepper for seasoning
directions:
Wash the potatoes in boiling salted water and allow 20 to 30 minutes till soft and well-cooked. Then peel them after cooling and put in a mixing bowl. Mash them well and add in 2 yolks of the eggs . In another bowl, combine half of the cheese with flour and season to taste with salt and pepper.
In a bowl, whisk the whites of the eggs till completely white. then put in a mixer all the ingredients along with chopped spinach leaves. Mix well to get a consistent mixture. Transfer to a mixing bowl and sprinkle with the remaining cheese. Lay in the oven tray at 300 degrees and cook 15 minutes. alternatively, you can spread in a non-stick pan and cook over the flame.
