Ingredients:
Serving 4
400 g chicken
4 cups rice
1 cup barberry
100 g onion
1 tablespoon tomato paste
1/3 cup rosewater
3 tablespoons strong brewed saffron
2 tablespooosn slivered pistachios
2 tablespoons lemon juice
Butter … 100 grams
Vegetable oil
Turmeric … 1 teaspoon
Salt
Water … 1 Liter
Here is the unique recipe of the traditional and yummy Iranian dish! Hope you like it!
Directions:
grease a frying pan with 2 spoons of oil and put it over the medium heat. Don't forget to sprinkle in a little turmeric powder. Saute a bit and add in the chopped onion. Wait till the onion is golden brown. Add in chicken pieces and keep mixing 15 minutes and allow the juice of chicken is massed.After that pour in boiling water and wait 45 minutes till chicken is cooked and there are 2 cups of water at the dish.
Take butter and mix with 1 tablespoon of liquid oil. Put over the stove and wait till it melts. Then stir in tomato paste and saute a bit. Also add in rosewater, lemon juice, and brewed saffron and mix finely. Remove from the heat.
Once chicken is done, add in the mixture and season to taste with salt and pepper. Mix properly till the tastes are combined.
Wash the barberry and drain well. Equally, wash the slivered pistachios and strain. In a small pan, pour 2 tablespoons of oil and put over the low flame. Add in the barberry and saute only 1 minute. Take care not to overdo as their color grows black. Then pour in 1 tablespoon rosewater and 1 tablespoon saffron and keep sauteing another 3 minutes. Add in the silvered pistachios and remove quickly after a whisk.
Wash the rice and put in a proper-sized water with enough amount of water. Once half-cooked, strain rice. Put back into the pot and close the pot with a lid wrapped in a clean piece of cloth round it. Once the rice is ready, take 2 spatulas of the rice and mix with, prepared mixture of saffron, barberry and pistachio. Zereshk Polo or literally Rice and Barberry is ready to serve now.
Transfer chicken into a desired dish and serve with rice. Very Yummy. Bon appetit!
