Ingredients:
300 g fresh lamb
½ cup chickpeas
½ cup white beans
3 garlic cloves
2 eggplants
1 onion
1 cup strong Kashk
Salt and pepper for seasoning
3 tbsp. dried mint
Kashk Abgusht
Instructions:
Soak the beans and chickpeas overnight. Remember to change its water several times.
Place piece of red meat in a pot along with soaked chickpeas, beans, chopped onion and garlic. Fill a couple of cups water and allow to cook on medium heat. Make sure not to sprinkle salt during the process.
Peel off the eggplants and slice. Cook in a dish of water and crush afterwards. Add mashed eggplants to the pot foolowed by Kashk in the end. Stir well. Wait 10 minutes till well-settled.
In a pan sauté a bit 3 tbsp. dried mint in oil. Equally, add sautéed mint to the pot and mix well. Season to taste with salt and pepper. Allow a couple of minutes to prepare fully.
Transfer to your favorite dish. To serve, remove the gravy and transfer into a bowl. Mash the contents finely with a masher. Bon Appetite!

The delicious, nutritious cuisine is often times severed in cold seasons.
If desired, you can add 1 potato (cubed) to the pot.
An alternative for cooked eggplants is to fry them and crush before adding.
