Ingredients:
3 cups half cooked (cook pre-soaked rice in boiling water with a dash of salt for 3 minutes, drain)500 grams lamb (leaner cuts are preferred)
Handful of prunes
4 tablespoons rice spice-mix (equal parts cinnamon, dried rose petal, cumin, cardamom, ginger, cloves and nutmeg, all in powder form, mixed together well)1 big potato
100 grams melted butter
3 tablespoons vegetable oil
Salt, pepper and garlic powder to taste
How to:
Cut lamb in big chunks (one for each person) and sprinkle generously with garlic powder. In a big pot heat the oil, then cover the bottom of the pan with thin slices of potato. Top with half the rice. Put the meat and prunes and sprinkle with the spice mix. Top with the rest of the rice then pour melted butter evenly on top. Cook on low heat for 3 hours or until the lamb is completely done. Top with more melted butter before serving./J
