Grilled dishes are popular in our society today; they could be the best food, if someone wants to serve his guests in the best possible way, he would prepare the barbecue (kebab or grilled meat), if kebab is useful to that person's temper, although it is a good food but should be noted that a good food is a food that guarantee the person's being healthy. Some Red meat and sea food dishes are not fried but they are also so good, and their taste and color are pleasant. It is hoped that with the correct use of them, you will always be healthy and happy.
Barbecues should be used by the preparation of the best meat of young sheep, mutton, beef of young cattle and young camel.
These meats can be used both alone and in combination, and even undercooked. It is better to use sirloin or fillet parts of the animal for preparing grilled pieces of meat "Chenje or Barg kebab". But to make "Kubide kebab", it is better to use meats around kidney.
It should be noted that when you eat meat, be sure that the meat is healthy, and it is washed and the blood and other contaminants are completely removed. Unfortunately, in our country, it is a common misconception that grilled meats should not be washed because people believe that by doing so, they will ruin the barbecue "kebab", while such a belief is a fallacy.

1. Kubide Kebab (grilled ground meat)

Mutton without bones (around kidney) ..................... 1 kgonion ...................... 1 large

Recipe:
clean The good meat completely, crush it and then wash it several times with cold water, put it in the colander until the water is drained. Then put it in the freezer for 1 hour to make it a little stiff and, therefore, it could be easily ground. First, ground meat in larger pieces, then salt it. For the second time ground it in smaller sizes or in average size. This makes the meat not to be dropped or stiffed on the stove. After grating the onions, get the water of onions, and add it with grated garlic and turmeric, pepper and saffron and knead the meat completely in order to be consistency. After washing the special skewers, dry them with a clean cloth. Finally, separate some meat (weight of 75 grams), put it on the skewers and close the top and bottom of it and put it aside. When pricking, wet your hands with warm water.Note:
it is Better to make this kebab with fired charcoal barbecues and on its flames, it will be cooked better. After blushing the coal, put the meats on it, so that they are cooked but not be burnt. It is Better to turn them frequently and cook both sides together; otherwise, the meat would be stiff and undercooked.Note:
Try this dish with fresh basil and tomatoes and brown sumac, and also chew it well.2. grilled tomatoes for 4-5 persons

Clean and Wash tomatoes and cut them in halves lengthwise, then check the grill, so that all of the skewers of tomatoes are in a row, the cut surface of them should be on one side. Then put them on the grill and cook them well (both sides). Grilled tomatoes can be eaten with other types of kebabs. Enjoy them.3. Barg kebab for 6-7 persons

Recipe:
First, remove the vessels of the meat and put it in a colander, rinse well and let the water be drawn. Next, check the grill and put the meat and on the skewers. Then put them on the fire. This dish is very tasty and it is so good for its fat.6. Bakhtiyari Kebab (2) for 10-12 persons

chop The meat into proper pieces, clean and wash them with water and put them in a colander until the water is drained. After cutting the fat, wash it again. This dish can be cooked with tomatoes and fresh basil or with a variety of cooked rice and "polos".
11. Loqme kebab per person 6
ingredients:
Ingredients for the preparation of loqme kebab or "grilled pieces" is exactly the same as kebab.Recipe:
After preparing meat, slice the meat in to small pieces (about 25 grams). Have them in the size of one third of a finger. This kebab (grilled meat) can be prepared in two ways:1. Prepared chin on special studs already have prepared, put, put on barbecues and gradually bring them back with pliers to be grilled.

2. It should not have any sore or lump on it.
3. Use a knife and cut it without removing parts of the liver to see the inside.
4. Firmness and softness of the liver should be the same in all areas.
5. When cutting the liver through the middle, there should not be any stone (white stone calcium).
6. edges of the liver should be quite thin and sharp.
14. grilled white sheep liver for 4-5 persons
