Ghalyeh Meigo is a favorite dish to the Bushehri. Meigo means Shrimp.
Ingredients
Shrimps, 500 g
Coriander leaves, 600 g
Fenugreek, 100 g
Tomato paste, 1 tbsp
Onion, small, 1
Boiling water, 2 cups
Garlic cloves, 8 nos
Tamarind, 1 packet, mix it with water to get a thick juice
Spices for fish, 1 tbsp
Potatoes, Medium-sized, 2 nos
Flour, 2 tbsp
Liquid Oil, 1/2 cup
Salt and pepper, as per taste

Directions
Clean the shrimps proper and remove their veins and wash nicely. Take a pot and sauté chopped garlic and onions in drops of oil. Stir in fresh chopped coriander and fenugreek till they change in color. Then season with tomato paste and spices, salt and pepper. Pour in the Tamarind juice along with cubed potatoes and cleaned shrimps. Give the stew 30 minutes over the medium heat to settle.
Note: To prepare Tamarind juice, mix 2 glasses of boiling water with Tamarind in a bowl and after 15 minutes, sprinkle in the flour. Stir a few times. And sieve it to get the juice.
