Ingredients
Eggplants, sliced in rings, and fried, a couple
Eggs, 2 to 3 nos
Salt, pepper and turmeric, as per taste
Fetta cheese, or any other type like mozzarella or Parmesan if desired
  Layered Eggplants
Procedure
First Cut the eggplants plants into rings . Arrange them at the bottom of a frying pan and fry thoroughly in drops of oil.
Crack Eggs inside a mixing bowl and beat. Sprinkle in your desired spices, like turmeric, pepper and salt and mix well. Once the eggplants are fried pour the eggs over them. If desired, you can also apply Fetta cheese or any cheese of your choice. Try to spread the cheese over the eggplants thoroughly. Put the lid and allow the eggs to get firm. Give enough time till the cheese is entirely melted. As simple as that! Can you believe so? Serve in a plate or platter and garnish with vegetables of your choice. Bon Appetit!
