The famous dish belongs to the city of Tabriz. Of course, different types of Kufta are tried through the middle east. What makes Tabrizi Kufta distinct is the ingredients and the way of preparing it.
In the cuisine, aromatic herbs are applied. Originally, the fresh meat was processed with a mortar and then herbs and split peas were added. But recently, minced meat is applied for comfort. Boiled egg, walnut pieces and dried prunes are filled inside Kufta. The dish is decorated with fried sliced onions and sautéed barberry. There is a sauce in the recipe in which tomato paste, and saffron are used as seasoning.
Ingredients
Minced meat, 800 g
Cooked split peas, 300 g
Cooked rice, 2 tablespoons
Onions, large, 3 nos
Dried prunes, 3 nos
Oil, 2 tablespoons
Tomato paste, 1 tbsp
Salt, pepper and turmeric, as per taste
Cook and grind split peas. Take one of the onions and mix together with minced meat, ground cooked split peas, cooked rice in a large mixing bowl. Season to taste with salt , pepper and turmeric. Crack in an egg and mix them well. Knead well with your palms to get a soft meat paste. If you apply a blender, they will be mixed in only a few moments.
In a saucepan pour some water and put the eggs inside. Bring them to a boil. Keep the boiled eggs aside for filling. Soak the dried prunes in water for a few hours till soft to handle. Take a large orange-sized ball off the mixture and make a cavity inside. Put one of the boiled eggs inside and shape it into a ball again. Be careful to cover the egg with the mixture. Do another with the remaining egg. Take another ball off the paste and put inside 3 soaked prunes and cover carefully so that the ball shape of the Kufta is reserved. For the last one, put walnut pieces inside the ball and make another spherical Kufta.
Now let's go over to the juice or sauce in which the prepared balls should be cooked.
Grate the two remaining onions and mix together with to glasses of water, 2 tablespoons oil, and 1 tablespoon tomato paste. Season to taste with salt, pepper and turmeric. Put the mixed ingredients in a pot and bring to a boil. Then arrange the Kuftas inside the boiling sauce very carefully. Reduce the heat to low till they are cooked thorough. If desired, you can place a couple of prunes in the sauce as well to make it thickened. Now pour the gravy or the sauce inside a bowl and sprinkle cinnamon powder on top. Arrange the Kuftas inside a large plate and take on to the table. Serve with fresh Persian bread and pickles. Yum Yum! Bon Appetit!
