Ingredients,
Chickpeas, 1 glass
Mutton or beef with bones, 500 g
Salt, pepper and turmeric, as required
Kashk, a diary product used in Persian cuisine, as required
Gandom Shir, 2 glasses
Persian Reshteh noodles, some
Fried mint and garlic cloves, as per taste
Onion, 1 no
Cook meat along with chickpeas, Onions, turmeric and pepper. Once done, smash meat and then add in Gandom Shir. Let it cook. Once cooked, stir in some Kashk. Add in Persian Reshteh noodles, stirring. At the end, add in fried mint powder and fried chopped garlic. Give it time to cook thoroughly.
Directions for Gandom Shir (literally wheat milk)
First grind wheat like groats with a grinder. Using a sieve, take the flour entirely. After that, cook ground wheat with milk, ginger, black cumin, pepper, caraway and salt. Put the mixture inside a piece of cloth in a dish till completely dry. Gandom Shir is very nutritious and is applied in traditional Ash cuisines in Kerman Province.
