You can't guess how it is simple to make delicious cutlets out of rich black -eyed beans.
Black-eyed beans are present only in a few recipes such as Rice and Dill with Black-eyed Beans. But you can be more creative and make yummy things. One is the recipe offered here. Give it a try to taste something quite different!
Ingredients
Serves 4
500 g Black-eyed Beans
2 beaten eggs
Salt and pepper for seasoning
Oil for frying
1/2 cup Flour
1 Onion, small, grated
1/4 tablespoon baking soda
1/4 tablespoon baking powder
Set a saucepan on the heat and fill with water. Add in the Black-eyed beans and allow till they are almost cooked. Grind them and put in a large mixing bowl. Put in baking powder, baking soda, grated onion, and 1/2 cup Flour. In a small bowl crack the eggs and beat well. Add into the mixture. Season to taste with salt and pepper. If desired, you can also sprinkle in a pinch of turmeric powder. Mix the ingredients well. The mixture should be sticky and consistent. If it is too sticky, you can add a little flour to make it firm. Rub your palms in flour and take an orange-sized piece off. Shape it into a flat round shape. Then fry in oil in a non-stick frying pan. Once one side is fried flip over to fry the other. Repeat the same with the remaining mixture. Switch off the heat and arrange cutlets in a desired serving dish. Serve with fresh Persian bread and basil leaves. Bon Appetit!
