Ingredients
4 glasses Cooked rice
5 eggs
2 glasses bread crumbs or powdered toasted bread
1 glass Parmesan cheese, grated
2 tablespoons parsley, finely chopped
Mozzarella 2 tablespoons
Salt and pepper for seasoning

Directions
Put the cooked rice inside a mixing bowl. Rice should be loose and sticky to handle. Then add in grated Parmesan. Crack in 2 eggs and season to taste with salt and pepper. Knead well with your palm to get a soft and consistent mixture.
Take a small piece off the rice mixture and spread on your palm. Put a small piece of Mozzarella in the middle and then shape into a ball. Repeat this with all the ingredients. In a plate mix bread crumbs and nicely chopped parsley. Break 3 remaining eggs in a bowl and beat well with a fork or whisk till smooth. Put a frying pan over the heat and grease it with plenty of oil. The heat should be medium. Allow till hot. Put the meatballs or Kuftas first in the bowl of beaten eggs and then onto the plate of bread crumbs. Roll well till the balls are fully covered in crumbs and parsley. Then put the balls in hot oil and fry completely. Do all the Kuftas this way. Finally, put them on paper towels till their excess oil is removed.
Transfer to a serving dish and serve with fresh Persian bread, preferably Sangak, and hot tomato sauce. Bon Appetit!
Cooking points,
In order to prevent meatballs from falling apart, the mixture should be consistent and sticky. Once shaping into balls try to press them well. Also the oil in the frying pan should be hot.
