The dish is traditionally made in Kashan. Give it a try! You might like it. Here is the recipe :
Ingredients
Lamb muscles, cut into stewing pieces, 500 g
Sliced onions, 500 g
Eggplants, small, sliced ,6 nos
Tomatoes, cut in rings, 4 nos
Pomegranate paste, 1/2 cup
Salt, pepper and turmeric for seasoning
Jojoi Tas Kebab
Directions
Arrange the rings of onions at the bottom of a pot and put the stewing meat over the onions. Season to taste with salt, pepper and turmeric. Put the rings of unpeeled eggplants on the meat pieces. Arrange slices of tomatoes on top. Pour in 2 glasses of water and allow to cook. Once the water is boiling, reduce the flame to low and give it 2 1/2 to 3 hours till ready.
30 minutes before removing from the heat, pour in the pomegranate paste. Once ready, transfer to a platter or a large plate. You can serve it either with bread or rice. Bon Appetit!
