Kashke Kadu ( Kashk and Courgette) is a traditional dish in Kerman. It does n't contain lots of calories but is rich in calcium due to Kashk.
Ingredients
8 green courgettes
1 cup Kashk, a diary product used in Persian cuisine
2 tablespoons fried onions
1 tablespoon sautéed garlic
2 tablespoons sautéed mint powder
30 g walnuts
Salt, black pepper and turmeric powder, for seasoning
Oil for frying

Directions
Peel the courgettes and cut them lengthwise. If you are obese, you can get them steamed. In another dish fry the onions and garlic and add into the courgettes. Season to taste with salt, black pepper and turmeric powder. Put the lid and allow till the water from courgettes is evaporated. If desired, you can apply 2 tomatoes and put inside the pot after chopping. Once cooked, crush them with a masher till smooth and soft. Add in the powdered walnuts along with Kashk. Put the pot back on the heat till the water is gone. Then add the remaining Kashk and put in a serving dish topped with fried onion and garlic, sauteed powdered mint as well as walnut powder. If desired, you can mix 1/2 cup Kashk with 2 tablespoons brewed saffron and garnish the dish. It is served with bread. Bon Appetit!
