The dish, originally, belongs to Kurdistan Province.
Ash is a Persian cuisine which seems like soup. But sort of thick. Grains and herbs constitute the main ingredients.
Ingredients,
Serves 4 to 6
Lentil , 200 g
Wheat groat bulgur, 200 g
Fried slice onions, 2 tablespoons
Potato, 1 no
Salt, pepper and turmeric, as per taste
Dried mint powder, sautéed in oil, for garnishing
Procedure
Lentil and Wheat Groats (Bulgur) Ash
Put the lentil and Wheat Groats bulgur in a pot and pour over 2 liters water. Set over the fire and let cook. Then take a saucepan and heat drops of oil. Sprinkle in turmeric, pepper and fried onions and after that transfer into the boiling pot. Let it simmer for a few minutes and then adjust it's salt. Chop potatoes into tiny cubes and stir into the pot till cooked. Give it enough time so Ash gets thickened and all the ingredients are cooked well. Remove to a deep-bottomed bowl and garnish with dried mint sautéed in some oil. Serve hot with fresh sour lemon. Bon Appetit!
