Ingredients
Serves 8
500 g quinces
300 g Cooked chicken breast
2 cups Rice
2 tablespoons Brewed saffron
1 tablespoon cinnamon
1 cup yogurt
3 Eggs
Salt and pepper for seasoning
2 tablespoons olive oil
25 g butter
1/2 cup strained yogurt
Directions
Soak rice in salted water for at least one hour. Put a pot on the heat and fill with water. Bring to a boil. Then transfer the soaked rice into the pot and allow till half-cooked. After that strain the rice and keep aside.
Cut the cooked chicken breast into shreds. Peel the Quinces, slice them and sauté in butter in a pan.
Next stage is to prepare the mixture used in Tahchin. Take a large mixing bowl and mix yogurt, saffron and beaten eggs. Combine them well. Then add in olive oil.
Mix entirely the strained rice with the prepared mixture and adjust the seasoning, salt and pepper.
Grease a ring mold pan with drops of oil. Spread a layer of Tahchin mixture followed by a layer of shredded chicken breast on top. Then arrange a layer of sliced Quinces and sprinkle cinnamon powder on them. Spread another layer of the remaining Tahchin mixture on top. Preheat the oven at 180 ° celcius for 10 minutes. Lay the pan into the oven and wait 45 minutes till ready. Flip the rice over carefully in a serving dish and garnish with Strained yogurt. Serve hot with fresh basil leaves and pickled vegetables.
