Ingredients
600 g lean fresh lamb
5 tablespoons Fresh herbs such as, oregano, and purple basil
1 Onion
Salt, pepper, turmeric, and Golpar, for seasoning
2 tablespoons Tomato paste
Olive oil for frying
A couple of tomatoes for grilling
Directions
First Grate the onion in a large mixing bowl and mix well with ground meat, spices like turmeric, pepper and Golpar. Also add in salt and finely chopped herbs. Knead well all the ingredients till the mixture gets sticky enough to handle. Set a non-stick frying pan on the low heat and grease with drops of olive oil. Take a large walnut-sized piece off the bowl and flatten in your palm. Shape to your desired shapes, round or oval. Arrange the patties inside the pan and fry Shami Kebabs on both sides. In a small bowl pour a little water and add the tomato paste. Mix well and season to taste with salt and pepper. Continue stirring to make tasty sauce. Pour the prepared sauce all over the fried patties in the pan over the flame till sauce is absorbed into the Shami Kebabs. Oil will accumulate the pan after a couple of minutes.
Put a couple of tomatoes onto the skewers and grill them on the stove. Transfer Kebabs into the serving dish and decorate with grilled tomatoes. Serve with saffroned rice. Bon Appetit!
