Tomato Ash is tried throughout the country but in Tabriz it is made in a special way and contains vitamins and protein.
Ingredients
Tomatoes, 500 g
Ground meat, 250 g
Rice, 1 cup
Water, 4 cups
Wax beans, 1 cup
Kidney beans, 1 cup
Lentils, 1 cup
Unripe grapes juice, 2 cups
Parsley, 200 g
Leek, 100 g
Tarragon, 100 g
Salt and pepper, 1/4 tbsp, each
Procedure
Cook Lentils and beans for one hour.
In a separate dish, sauté minced meat over the flame.
Put rice in a large pot and let it get half-cooked. Chop the leek and tarragon into tiny pieces and add into the rice. Allow it to cook till softened. Chop tomatoes as well and add into the pot. Add in sautéed meat as well as grains. Allow it to cook over a low heat for one hour.
At the end, add in the seasoning like unripe grapes juice, salt and pepper and stir frequently.
Cooking points,
Instead of minced meat, you can apply tiny pieces of meat but make sure to sauté in oil before using in the cuisine.
To garnish , sauté mint powder and chopped onions for 3 minutes. And arrange on top of the bowl of Ash. Tomato Ash
