Zucchini and Sour Orange casserole is a local dish in Golestan Province.
Ingredients,
Courgettes, 1 kg
Tomatoes, grated, 1/2 kg
Onions, 2 nos
Pomegranates seeds or barberry, 2 tbsp
Salt and pepper, as required
Sour orange juice, 1 tbsp
Procedure,
First chop onions into slices and sauté in the pan. Slice courgettes as well and add in onions. Once, courgettes are cooked, add in tomatoes as well as salt, pepper, and pomegranates or barberry, stirring well till mixed nicely. In this stage you can pour in sour orange juice if you like. Keep it over a mild flame for 20 minutes till done. It is ready to serve.
