Kuku also spelled as Kookoo is an egg based Iranian dish. It is frequently a vegetarian dish, made with whipped eggs which then are folded in with various ingredients. It is similar to the Italian dish frittata or an open-faced omelette.

Ingredients

Serving 4
3 eggs
150 g coriander, chopped
150 g celery leaves, finely chopped
2 tablespoons wholemeal flour
Salt , turmeric, and black pepper powder for seasoning
Oil for frying

Procedure

Crack the eggs in a mixing bowl and beat with a spoon till smooth. If you do this perfectly, your Kuku will puff during frying and will be more crispy and tasty so whisk well. Add the seasonings, salt, turmeric and pepper powder. Then add in the herbs and keep whisking. If the mixture is loose and mushy, add in a bit of flour. Take a deep-bottomed frying pan and grease with enough oil. spread the mixture in hot oil and flatten the top with the back of your spoon. Close the lid and allow till Kuku is cooked especially in the middle. Then turn it over and fry the other side. You can also cut Kuku in wedges and fry each part. The second side of Kuku should be fried with no lid on to prevent it from releasing water and to get crispy and yummy. After 20 miuntes to a half hour, it is ready. Remove to a desired serving dish and garnish with celery, coriander, tomato slices and pickled cucumbers. Serve with fresh Persian read. Bon Appetit!
