Kuku also spelled as Kookoo is an egg based Iranian dish. It is frequently a vegetarian dish, made with whipped eggs which then are folded in with various ingredients. It is similar to the Italian dish frittata or an open-faced omelette.
Ingredients
3 tablespoons olive oil1 small onion, finely chopped
1 clove garlic
1 red bell pepper
150 g rice
400 ml chicken stock
3 dessertspoons butter
175 g mushrooms
4 dessertspoons Parmesan cheese
8 eggs
Salt and ground black pepper powder for seasoning
Directions:
Pour oil in a frying pan and saute the chopped onion. Then add in cubed garlic and chopped bell pepper. Keep sauteing another 6 minutes till entirely sauteed.Cook the pre-washed rice in chicken stock and add the butter. allow 25 minutes till it is well-done. In another dish saute the mushrooms and then add the cooked rice and sauteed mixture into the mushrooms dish.
Break the eggs and beat ell and in the end add pizza cheese.Mix all the ingredients well. You can apply an electric mixer to make a soft and consistent mixture.
Set a non-stick frying pan over the heat and spread whole mixture all around the pan. Fry two sides and cut into wedges with a knife.
