Kuku also spelled as Kookoo is an egg based Iranian dish. It is frequently a vegetarian dish, made with whipped eggs which then are folded in with various ingredients. It is similar to the Italian dish frittata or an open-faced omelette.

Ingredients:

Serving 7
1 whole chicken, almost 1 1/2 kg
10 eggs
1/2 cup fried onion
1 whole onion
200 g oil
2 teaspoons baking soda
1/2 cup fresh lemon juice
1 teaspoon ground saffron
Salt and pepper or chili powder for seasoning

Directions:

Cook chicken with 1 whole onion in pot of salted water. Once well-done (when the stock measures 1/2 cup) remove from the heat and keep to cool. Then remove the bones and grind the chicken and keep aside.Dissolve saffron powder in a little boiling water and do baking soda in cold water. In a large mixing bowl, crack the eggs and beat well with a fork till bubbly. Season to taste with salt and pepper and add in the rest of the ingredients including, dissolved baking soda and saffron, fried onion, fresh lemon juice, if desired, as well as ground chicken and mix well.
Heat oil in a non-stick frying pan and spread the mixture inside and fry properly till golden on both sides. You can do it a few times if your pan is small-sized. Once ready, lay on a serving plate or platter and garnish with tomato slices or other colorful vegetables. Serve with fresh Persian bread. Bon Appetit!
