Ash is a Persian cuisine tried in many parts of the country. It is very nice during cold days. The basic ingredients include grains, beans and peas, fresh leafy vegetables or greens, and so on. It is sort of thick soup and has many diverse types.
The dish offered here is tried in Gilan, north of the country.
Ingredients:
1 cup chickpeas1 cup beans
1 cup raisins
350 g ground mutton
100 g dried peach, cut in half
1 simple beet
3 medium carrots
700 g Leafy vegetables , including leek, parsley, coriander and spinach
1/2 cup rice flour
1/2 cup sugar
1 to 2 tablespoons flour
1 glass unripe grape juice
5 tablespoons sauteed dried mint
1 onion, finely chopped
Salt and pepper for seasoning
Oil for sauteing
Directions:
Soak chickpeas and beans for several hours and then cook in a pot. In the middle of the process, mix together rice flour and some water in a bowl and add into the pot as well. Then go over to the chopped carrots and beet and add them too Season to taste with salt and pepper. Allow to cook on low flame.In a bowl, mix meat and grated onion and sprinkle a pinch of salt and pepper. shape into plenty of small meatballs and saute in a pan.
Add the dried peach and raisins and saute a bit. Add the sauteed ingredients to the pot. Clean the leafy vegetables and greens and wash properly. Chop and add into the pot. Finally add sugar and unripe grape juice and allow to settle.
When ready, transfer into a proper serving dish topped with fried onion and sauteed mint. Serve hot. Bon Appetit!
