Ingredients
1 ½ cup chopped vegetables (includes: Chives, Chervil, Coriander, spinach, fenugreek leaves)
1 ½ cup unripe grape juice
1 ½ Red Kidney beans
2 Dried limes
1 tablespoon tomato paste
Turmeric powder
Meat 350g (cut it into small bite-sized cubes)
Salt
Black pepper
1 teaspoon Saffron (crushed saffron)

Meat and vegetable stew also known as khoreshe Ghorme Sabzi is a tasty and original stew in Iran. Here is the recipe and some tips.

Instruction:

Chop the vegetables completely and sauté with a little oil until turn to very dark green. In another pot dice the onions and sauté until the onions are softened and translucent then add the meat. sauté it until its color changes to brown. Now for seasoning add some Turmeric powder, black pepper and 1 tablespoon tomato paste. Stir until the raw flavor has cooked off.
Soak the crushed saffron in some hot water for as long as possible before using it then add half of it and fried vegetables into the pot.
Wash the Red Kidney beans. Add to the mixture of the pot. Stir and sauté then pour some boil water. Reduce the heat to medium. Cover the pot with a tightfitting lid, and simmer, until the beans and meat are tender about 1 ½ to 2 hours.
Now cut the dried limes in half and remove any seeds. Add them and remain half of saffron into the pot and simmer for an additional 15 minutes. Season it with salt and pour unripe grape juice. Cover the pot again and continue cooking for another 15 minutes. Taste and season with salt and pepper as needed. Make sure the stew stays at a very low simmer.
Serve it with cooked rice.

Additional tips:
1- Adding greengage paste instead of tomato paste would be more delicious
2- Some people don’t use spinach but try it with spinach and see tremendous difference in flavor.
3- You can use powder lime or powder unripe grape instead of unripe grape juice.
4- Notice that the more the time of cooking, the best flavor it has.
5- Sautéing vegetables with vegetable oil would make it more delicious.
