Peryoleh ( Poryoleh Ash) or Lentil Ash is a local dish in Kurdistan Province. The dish is especially made in Sanandaj in cold seasons.
Ingredients
Serves 4
300 g lentils
2 Medium-sized onions
Persian Reshteh noodles, as required
Spices and oregano, to taste
Salt and red chilli powder, to taste
Peyoleh Ash
Procedure
First wash lentils and put in a pot over the heat. Let it cook.
In the meantime, fry in oil chopped onions and sprinkle with salt and spices to taste. Once lentils are cooked, add in fried onions and sprinkle in oregano.
At the end, put inside Persian noodles and let it cook over low flame till settled. Serve in a desired bowl. Bon Appetit!
