The dish is locally made in Ardebil Province.
Ingredients (serves 6)
Chicken breast, large and skinned, 2 nos,
Chicken legs, skinned, 4 nos
Olive oil, 2 tbsp
Shallots, peeled, 200 g
Garlic bulbs, 2 nos, finely chopped
Fresh ginger, 4 cm, grated
Caraway powder, 1 tbsp
Coriander seeds, almost ground, 1 tbsp
Cinnamon stick, small, 2 nos
Walnuts, ground, 375 g
Chicken stock, 1/2 liter
Honey, 1 tbsp
Coriander, finely chopped 2 tbsp
Saffron and chili powder, ground, as per taste
Procedure
Put the flame in low, and sauté skinned Shallots until golden in color. Stir in seasonings like chopped garlic and grated ginger and sauté for 1 minute.
Add in the ground walnuts into the pan and mix well till the flavor of the spices are blended with walnuts. Now transfer fried chicken pieces into the pan and pour in the chicken stock and honey. Once it starts boiling, put the pan in the pre-heated oven and give it 40 minutes to soften. Once ready, sprinkle chopped coriander over and serve. Bon Appetit!
