Yatimak

Yatimak is a dish which is perhaps the same as Yatimche tried across the country. The cuisine does n't contain meat, and is not fried so that's a good and healthy meal for vegetarians. Yatimak contains protein, though, due to the existence of beans. Eggplants make the recipes quite yummy. Don't you think so?
Ingredients
Eggplants, 4 nos
Onion, 1 no
Black-eyed beans, 1 cup
Tamarind juice, 1/2 glass
Salt, pepper and turmeric, as per taste
Water, 1 glass
Oil, a few drops
Procedure
Clean the black-eyed beans and wash. Cook them in a small pot. Change its water twice while cooking to remove its flatulence feature. In a frying pan, put the chopped onion and sauté till light. Peel the eggplants and put in salted water to remove its bitterness. Then wash them and squeeze to dry. Cut them in cubes and into the sautéed onion. Season with salt, black pepper and turmeric powder. Sauté a few seconds and the pour in one glass of water and give it half an hour till the eggplants are softened. Take a packet of Tamarind and put half of it inside 1/2 glass of water and mix. After half an hour, sieve it till the lumps are removed and you get a pure juice.
Put the cooked Black-eyed beans over the eggplants and pour in the Tamarind juice. Since Tamarind is salty, don't apply too much salt. You are recommended to add salt almost at the end d of the cooking.
You can apply a large amount of pepper, if desired. The dish is originally hot and spicy.
Once the tamarind juice is absorbed and the water is gone off, transfer to your desired platter and garnish with fresh herbs like parsley and basil. Bon Appetit!
