Abgusht, a delicious Persian meal, has always been popular. These days, many patients and especially the elderly are not allowed to consume red meat. So here is a recipe with chicken.
Abgusht is a nutritious favorite Persian cuisine which is tried throughout the country. But there are many ways to cook. It is a kind of meat gravy along with grains and beans and potatoes. If prepared nicely, it can make you a faithful fan.
Ingredients
1 whole Chicken, medium
1 cup split peas
1 onion, medium
1 tablespoon dried lime
1 tablespoon Tomato juice
1 tablespoon tomato paste
5 potatoes
Salt and pepper for seasoning
Peel the skin of chicken off and cut into 4 pieces. Put in a pan and sauté in oil till golden.
Set a pot over the heat and put chopped onion. Fry till golden brown. Add in the soaked split peas and sauté a bit. Put in the sautéed chicken pieces. Add in 4 glasses of water as well as a pinch of turmeric powder. Allow to cook on the low flame. Then add in dried lime, seeded. After that, peel 5 potatoes and add into the pot. Adjust the seasoning, salt, and pepper. At the end, add in tomato juice as well as tomato paste. Keep cooking on the low flame. Let it simmer. The gravy should meet your own desired consistency. But do not overcook. Once ready, remove to a bowl and serve hot with fresh herbs like basil leaves or pickled vegetables. Pour the gravy in a separate serving dish and put little pieces of Persian bread, Sangak, and allow the gravy to be absorbed into the bread. Bon Appetit!
