Women in Qeshm Island, make savory and quite appetizing foods out of fish, shrimps, crabs, meat, dates, flour, sugar, oil and grains. To roast the small fish like sardines and Gary, they would n't disembowel them but the large fish like javelin, red snappers, Hoor and Zardeh should be disemboweled before washing. A mixture of fragrant herbs like coriander and dill, chopped onions, pepper and spices are filled in their bellies. Then they are put on a metal sheet over the charcoal or stove.
Of note is that the fish are salted for 1 hour till salt is thoroughly absorbed in the fish.
The metal sheet should be completely hot; otherwise the skin of the fish sticks into it and is removed.
After roasting the fish, put them immediately inside a dish, splash drops of water over them to let the skin is removed when serving and then put the lid.
