If you want to try a different Ash recipe, we recommend you to make a traditional Azerbaijan Ash.
Ingredients
Serves 4 to 6
Sour yogurt, 500 g
Ice, a couple of cubes
Aromatic Herbs such as, leek, parsley, tarragon, coriander and beets leaves, a couple of sprigs
Rice, 100 g
Garlic cloves, grated, 2 nos
Salt a d pepper for seasoning
Ice Ash
Procedure
Soak the rice in water for almost 3 hours. Put the soaked rice inside a pot and add in 1 liter water. Also add in the chopped herbs and beet leaves. Set it over the heat and allow to cook nicely. Once it gets thickened, add in the grated garlic and switch off the heat till cool.
Refrigerate Ash and after a couple of hours, pour a ladle from it into a bowl and 2 ladles of home-made sour yogurt. Put inside a few cubes of ice and serve. Bon Appetit!
