Tahchin is a delicious Persian cuisine whose ingredients include rice, eggs, fresh vegetables and so on. You will love it if you ever try it once.
Ingredients
Rice, 3 cups
Chicken Breast, 800 g
Sultana raisins, 1/2 cup
Split peas, 1/2 cup
Eggs, 2 to 3 nos
Sour strained yogurt, 300 g
Onion, 1 no
Saffron, salt and pepper for seasoning
Oil for sautéing
Olive oil, a little
Procedure
Wash the rice clean and soak in water. You can either make Polo or Katteh ( 2 kinds of rice recipes in Iran) for the dish. Equally, wash split peas and cook in a pot.
Slice the onion and along with chicken breast sauté in oil in a frying pan. Once Chicken is finely sautéed, adjust the seasoning, saffron, salt and pepper powder. Pour some water over the chicken and allow to cook. Once done, shred chicken breasts into tiny pieces. Soak the raisins in water and sauté in oil.
Take a mixing bowl and crack the eggs in, beating with a fork. Then add in strained yogurt plus the brewed saffron and a little olive oil. Mix well.
If you are trying Polo, add in the eggs mixture into the strained rice and mix finely. Now put a layer of the rice inside a proper-sized pot and flatten and press with the back of your spatula. Put a layer of the shredded chicken, one layer of cooked split peas and last a layer of sautéed raisins. Flatten again and put the remaining rice over. Try to push down till the layers are tied. Let it cook over a very low flame for 1 hour to 1 1/2 hours.
Remove to a platter or large plate and garnish with Strained yogurt and raisins. Cut in wedges and serve with fresh herbs or pickles. Bon Appetit everybody!
Cooking points,
Make sure not to put the raisins on the sides of the pot since they will burn. Do not sauté raisins in heated oil either as it burns really quick.
Cream Yogurt is good too. But the sour strained yogurt make the rice more delicious since the existing yeast
You can add in pieces of butter into the pot once the steam come out. It will give it a better flavor.
Try to keep the heat low to prevent from burning. You can apply a pinch of cinnamon and green caraway, if desired.
If you put the shredded chicken inside the mixture of strained yogurt, salt , pepper and saffron for an hour, you will get a yummy taste.
